Apstrakt

Zamrzavanje je jedna od najčešće korišćenijih metoda konzervisanja mesa i mesnih proizvoda, naročito što u poređenju sa drugim metodama, primjena zamrzavanja vodi do najmanjih
promjena u kvalitetu tokom dugotrajnog skladištenja [1].
