Kategorizacija troškova kvaliteta u sistemu menadžmenta bezbednosti hrane prema PAF modelu

Apstrakt

Zbog sve složenijeg poslovnog okruženja, učestalih promena i veće konkurentnosti, kompanije u prehrambenoj industriji moraju da obezbeđuju proizvode visokog kvaliteta, dok istovremeno minimiziraju njihove troškove kvaliteta. Troškovi kvaliteta igraju značajnu ulogu kao pokazatelji nivoa kvaliteta pa, samim tim, i usmeravanju organizacije ka prioritetima za poboljšanje kvaliteta koja mogu da dovedu do smanjivanja ukupnih troškova. Troškovi kvaliteta su, zapravo, troškovi koji nastaju kada se stvari ne urade ispravno iz prvog puta. Dakle, oni se mogu minimizirati samo kada se postigne optimalan nivo usaglašenosti.


U literaturi je u najvećoj meri zastupljen PAF model, koji troškove kvaliteta deli na tri kategorije: troškove prevencije, troškove procene i troškove neusaglašenosti. Prema istraživanjima, veće ulaganje u troškove prevencije i procene, dovodi do snižavanja ukupnih troškova.


Ovaj rad ima za cilj da utvrdi kojim kategorijama troškova pripadaju mere i aktivnosti u okviru svakog zahteva standarda ISO 22000:2018 Sistemi menadžmenta bezbednošću hrane - Zahtevi za svaku organizaciju u lancu hrane, obzirom na široku primenu navedenog standarda u prehrambenoj industriji i obzirom na preventivni karakter standarda, u uslovima adekvatnog i neadekvatnog ispunjavanja zahteva. U radu će biti prikazan sistematičan pregled zahteva standarda ISO 22000:2018, uz predlog mera i efekata mera kategorisanih prema PAF kategorijama troškova. Istraživanje je obuhvatilo pregled literature,a doprinos rada je tumačenje zahteva standarda ISO 22000:2018 sa aspekta kategorizacije troškova kvaliteta.
